Dal Tadka
The quintessential comfort food. Yellow dal tempered with cumin, garlic, and red chillies in hot mustard oil — this is where तड़का earns its name.
Ingredients
- 1 cup yellow moong dal (split)
- 2 tbsp Tadka mustard oil
- 1 tsp cumin seeds
- 4 cloves garlic, sliced
- 2 dried red chillies
- 1 medium onion, chopped
- 2 tomatoes, chopped
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- Salt to taste
- Fresh coriander for garnish
Instructions

Wash and soak dal for 20 minutes. Pressure cook with 2.5 cups water and turmeric for 3 whistles.

Mash the cooked dal lightly and keep warm.

Heat Tadka mustard oil in a pan until it shimmers and begins to smoke lightly.

Add cumin seeds — they should crackle immediately. Add sliced garlic and dried red chillies.

When garlic turns golden, add chopped onion. Sauté until translucent.

Add tomatoes and cook until soft. Add red chilli powder and salt.

Pour this tadka over the warm dal and mix well.

Simmer for 5 minutes. Garnish with fresh coriander. Serve hot with rice or roti.
