Baingan Bharta
Smoky roasted eggplant mashed with spices. Rozana soyabean oil lets the smoky flavour take centre stage without overpowering.
Ingredients
- 2 large brinjals (baingan)
- 3 tbsp Rozana soyabean oil
- 1 tsp cumin seeds
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chillies, slit
- 1 tsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
- Fresh coriander for garnish

Roast brinjals directly on a gas flame or in a tandoor until skin chars and flesh softens. Let cool.

Peel off charred skin and mash the flesh roughly. Set aside.

Heat Rozana oil in a pan. Add cumin seeds; let them crackle.

Add chopped onion and green chillies. Sauté until onion turns golden brown.

Add ginger-garlic paste and cook for 1 minute until raw smell goes away.

Add chopped tomatoes, turmeric, coriander powder, and salt. Cook until tomatoes break down.

Add mashed brinjal and garam masala. Mix well and cook for 8-10 minutes, stirring occasionally.

Garnish with fresh coriander. Serve hot with warm rotis.
